The china is washed and put away. The Easter baskets are empty, except for a stray wrapper or two. The relatives are on their way home after celebrating the resurrection of our Savior. Easter! What a beautiful time of year. What a Gift from God for his children.

You may have leftover lamb chops from your celebration. Leftovers are a gift for busy families! Here are a couple ways to enjoy the chops, again.
feta cheese, diced
cherry tomatoes, halved
red onion, sliced
2/3 C olive oil
1/3 C red wine vinegar
1 tsp. lemon juice
1 tsp. minced garlic
1/4 tsp. Dijon mustard
1 tsp. dried oregano
1 tsp. dried basil
1 tsp. salt
1/4 tsp. pepper
Mix olives, cheese, tomatoes, onion, and cucumber in a bowl. Prepare dressing and pour over vegetable mixture, tossing until all vegetables are coated. Place over a bed of mixed salad greens. Warm lamb chops slightly and serve alongside the salad with warm bread.
